Our Approach
We produced initial designs as part of the main contractors tender bid for building the new catering block and were the lead consultants, acting on behalf of the main contractor through the interview process. When successful in winning the contract we provided all the design, technical and financial expertise throughout the design and development process. Our remit included carrying out a competitive tendering exercise for the supply and installation of the catering equipment.
Challenges
The design brief focused upon sustainability, efficiency and quality in terms of the structure and operation of the building.
The project team consisted of 3 highly experienced caterers who had very specific ideas on how the facility would operate therefore our role was to mange expectations within budgetary and structural constraints.
Every aspect of the building structure and production methodology was carefully planned to achieve the highest possible BREEAM Rating
Outcomes
This kitchen produces a 21-day rotating menu within 15 working days, resulting in both energy and labour savings compared to that of a standard kitchen supporting a 365-day operation.
The unit has been designed to the highest standard in terms of food safety and health & safety compliance with personal hygiene stations, separate refrigerated rooms for different food groups and colour coded doors and utensils.
